Thailand has so much to offer and has many interesting places to visit.

leave the crowds behind, even during peak months, if you simply avoid some of the most popular destinations (eg, Chiang Mai
and all islands and beaches). This is also the prime time for diving in terms of visibility and accessibility."
This guide will give you an idea of the different regions. As quoted from the same site, the north-east is generally not touristy.

Although I have only been to Thailand a few times and the longest I have stayed is 7 weeks, I would consider the places in the following itineraries not touristy:

However, we find Chiang Mai not overwhelming. We love the Sunday market (not the evening market).

My suggestion is to go to one place and leave immediately if you find it too touristy.
