Tours vs doing it on your own

Hello, my gf and I are planning on being in China end of July/early August as part of our 6 month trip to Asia.

We are contemplating a 21 Day "Essential China" tour using Tour Vacations to Go, http://www.tourvacationstogo.com/china_tours.cfm?npid=7963&nhr=1. The price is USD $1,600.

The tour starts in Shanghai than to Xi-an, Chengdu and Leshan, Three Gorges, Yichang Wuhan, Yangshuo and finishes in Hong Kong and includes air, train, bus and boat travel. No food is included and the site advise we'll need about $300 a person. (Is this accurate?)

- Can anyone comment on this trip? If the tour is our only exposure to China we'll we be missing out on many "must see" places?
- Has anyone used Tour Vacations to Go or know about them?
- Do you know any other or better budget tour companies?
- Is it true that a tour can be cheaper than going to all these places on our own (assuming we are willing to stay in guest houses or hostels and eat cheaply)?
