I had the rabbit, salmorejo style. Rabbit is a very typical dish from the peninsula, but preparing it with salmorejo sauce is purely a Canarian specialty. The rabbit wasn't dry like you often find, and the rich, thick, and chunky salmorejo sauce was very tasty. The sauce is tomato based, and is actually an Andalucian specialty - the Canarians are the ones that paired it with rabbit. The veggies were a low point - very mushy. But hey - any veggies in Spain are always welcome, no matter how bad! Cauliflower, cabbage, broccoli, carrots, green beans - the selection was good, but the execution was bad!
