Reply to this Yes it is doable, but the bus rides to Cappadocia from Istanbul, and from Cappadocia to Ephesus will be many hours (about 20 hours or so). Flying is cheap so you should check out that option, as well as train. For example you can take an overnight train Istanbul to Ankara and then 3-4 hour bus from there to Cappadocia. Cappadocia to Ephesus is a bit tricky, there is no train but you could probably fly to Izmir (a short bus ride from Ephesus). From Izmir you can either fly back to Istanbul, or train, or bus. Izmir is a big city, very pleasant but I liked Selcuk (the small town next to Ephesus) very much as well. You could also stay in Kusadaci, which is a seaside resort, I haven't been, but it is very tourist oriented (not my taste certainly).
Remember that July will be very hot! It may put a limit to how much you can do, certainly Istanbul may be tough. Trekking in Cappadocia may be difficult, unless you are used to the heat. You may want to add a couple of days on the beach.
