Boil potato, fry tofu, mix everything up and simmer.

Fry tofu, remove, fry everything else, add a bit of water, add tofu, simmer, add lemon leaves

Avocado Shake 1 avocado
1 tbsp br sugar/honey
2 cup condensed milk or soy milk or yoghurt or milk or icecream
Go crazy with a blender
Soy Bean Recipes:
Soak Soy Beans til soft. Blend 1/2 and 1/2 soy beans and water (more soy beans = more soy-ish flavour), strain thru muslin cloth, boil. = Soy milk. Add vanilla.
Add lemon juice whilst hot = Tofu
Add lil bit of yoghurt
and leave overnight = Yoghurt.
Take the crushed soy beans left in the muslin, boil, strain, squish into a ball and coat in flour and spices, deepfry = 'Burgers"
Banana Cake 16 cups flour
12 tsp baking soda
4 tsp salt
8 cups raw sugar
2 2/3 cups oil
32 bananas
2 cups water
8 tsp vanilla
Mix flour soda and salt.
Beat sugar and oil, Add bananas, mash. Stir in water + vanilla.
Mix dry and wet.
Cook for 7 hours in a stone oven with a wood fire nearby to heat it. Or experiment with a normal oven. Your choice.
NB This is sufficient for 58 kids, 2 Dadas and 5 volunteers. You may wish to make less (maybe use 1/8 quantities)
Fried bananas mix flour, black and white sesame, sugar, salt and tumeric. Whisk in soy or coconut milk. Add anything else you think may be yummy. Add sliced banana. Pour A LOT of oil in a big pan. Get very hot. Submerse bananas. Turn heat down. Fish out and strain oil off them. Eat. Repeat with remaining mixture.
Yellow Curry Paste 1-2 people
2 red dry chillies
tbsp chopped shallots
tsp chopped galangal
tbsp chopped lemongrass
2 cloves garlic
pinch roast cumin seeds
pinch roast coriander seeds
tsp chopped tumeric
tsp yellow curry powder (tumeric)
tsp chopped ginger.
Pound it up for ages til its all squashed into a paste
Yellow Curry 1-2 people
heat 1/2 cup coconut milk til boiling.
Add 70g chicken or tofu and curry paste
Stir until almost done
Add 1 1/2 cup water, 1/3 cup sliced onion, 1 cup potatoes, and 1/2 cup coconut milk.
When potatoes done, sprinkle salt, sugar and soy sauce, add spring onion, serve

1 cup coconut milk
1 1/2 cup water
Papaya Salad 1-2 people
Peel green papaya, rinse, remove seeds and shred with grater. Can use green apple, cucumber, cabbage or carrot instead. You need 1 cup
Mash 2-3 cloves garlic, 1/3 cup chopped beans and 1-2 hot chillis in mortar.
Add tbsp lemon juice, 2 tsp sugar, soy sauce, a tomato and salt and mix well.
Add shredded papaya and mix well.
Eat with sticky rice. and peanuts
Pad Thai 1-2 people
Heat oil in wok on med heat.
Place 2 tbsp tofu
and fry til crunchy
turn heat low
Add 3 cloves garlic, 1 tbsp pickled radish and a pinch of chilli powder and stir a bit
Add 1/3 cup ripe tamarind juice, (or 2 tsp white vinegar mix with 3 tbsp water) and 80g rice noodles
Fry on med heat
Turn heat low
Make space and scramble an egg
add soy sauce, sugar, salt, 1 cup beansprouts and 1 tsp spring onions
Turn heat high and stir like mad.
Serve with peanuts if you like them
Banana in coconut milk 1-2 people
Heat 1 cup coconut milk and 1/2 cup water til boiling.
Add 2 chopped bananas and 1 tbsp sugar
Cook til soft
Add salt if you like that
serve with coconut milk or coconut cream on top
Sticky Rice Soak sticky rice in water overnight (or min 4 hours)
Wash twice
Steam in steamer for 30 mins til it is very soft
Keep in closed container to prevent drying out
If it cools, steam again to soften
Mango with sticky rice
1 normal person, or half a rowan
Heat half a cup coconut milk til boiling
Take off heat and mix in 1-2 tbsp
palm sugar (i recommend 2!) or brown sugar
Add 1/4 tsp salt - sounds weird but is very important - don't miss out or it will be too sweet
Mix in 1 cup sticky rice
Serve with mango and coconut milk poured on top
