A Sweet Treat: Banana Roti

One of my favorite treats are the banana roti. You can get them without bananas, too, but I prefer them with.

The cook cuts up bananas. Some will mix it with egg, some just put it to the side. Then the cook takes some dough and stretches it out and drops it in the hot oil. Then he puts an egg and banana mixture onto the dough while it fries. Carefully, the dough is turned and folded into a square, the banana filling inside.

When it's done cooking, it comes out of the oil and is laid on a piece of paper. (Yes, it gets greasy.) Some cooks roll it up, but most will cut it into little squares. Then, sweetened condensed milk is poured over the top. Some cooks will offer extra sugar (mine did) or chocolate (I had it this way a few years ago). One friend told me she knew a cook who added Nutella.

Then, it's put in a box and a baggie and served with a long toothpick or two. Perfect for eating this treat on the go. But be careful, it's piping hot!
