Well we have just had our tour’s farewell dinner at Restaurant Alberto K at the Royal, in Copenhagen. The following attempts to describe the menu, which in all honesty our language does not have enough words to describe….
Appetisers
Oysters with crème fraiche
Prawns sashimi with mayonnaise
Smoked quail eggs served with a puff of smoke and edible shell fragments and a large degree of theatre!
Chicken soup with caviar and spinach, served in an egg shell bowl
Wine: Champagne (mais bien sûr!)
Breads
Individual white muffin-shaped loaves with caraway seeds
Individual malted rye high tops
Served with cultured butter (regular or whipped)
Entrées
Mussels, served on a bed of tomato flesh with a nasturtium and dill salad. Clear tomato jelly with a mussel soup.
Wine: 2010 Gruner veltiner, Wachau, Austria
North sea cod, served with cabbage and seaweed salad, with a white (bleak) roe sauce.
Wine: 2010 Montagny 1.cru, Burgundy, France
Main
Veal from Himmerland, with charred onions and mushrooms and mushroom glaze.
Wine: 2008 Chateau Lafleur-Gazin, Pomerol, France
Desserts
White chocolate ganache ribbon with currants and green mint tea reduction; yoghurt and mint sorbet with honeycomb wafer.
Wine: 2011 Riesling, Mosel, Germany
Dark Berries, beer porridge, sweet cicely
Wine: 2006 Tokaji Aszu Number 3, Tokaji, Hungary
Coffee, tea
Chocolate mousse, raisins soaked in sherry.
