... Asians are all over their swallow's nests, which are made from bird saliva - yummy! Chinese prize these nests for their purported health benefits, using them to make soup - even though the priciest varieties are worth up to $2,000/kg, the sheer volume of nests for sale around Taipei was shocking. The high cost is a combination of the rarity of these nests, as well as the method of harvest - they are usually found in limestone caves in Southeast Asia, and require workers to scale the walls in order to obtain them.
