... khao soy is a popular noodle dish in Northern Thailand, and is inspired by a similar Burmese dish. The Northern version is more of a noodle soup, in a rich and sweet curry and coconut milk broth with veggies and pork. A nice touch was the deep fried noodles, providing a nice crispy contrast to the dish, and the soup was so tasty that alone it would make for a great dish.
