Panga with Vichyssoise Sauce ...

... the fish was nicely cooked, browned and crispy exterior but still juicy and tender on the inside. Problem was the plate was super-hot, leaving the fish a tad overdone by the time I finished up. The sauce had a nice flavour, but had congealed slightly, leaving an unpleasant skin over top. Not sure what was going on with the vegetables ... shredded carrots, zucchini, and cabbage with a round of potato, drizzled with a red pepper puree.
