K- There has been a lot of rice in Nicaragua. One day I realized that we had eaten rice with every meal for six days, including breakfast (Gallo Pinto (rice & beans) with eggs, cheese and tortilla is a breakfast staple here). Kicking off the blog again as we head off to South America for a 3 month trip. Hi to both of our Mums who we hope are reading!
