need advise for trip to Spain

Hello!

I am looking for advise in planning a trip to Spain and/or Portugal. I would like to travel in March or April, 2009. I love art, history, wine, food, cooking, and easy hikes or walks. I am a single traveler. I understand that one must know the language to visit rural areas, so I suppose I should stay away from the smaller towns unless I have a guide. Can anyone suggest a path for me to take, or ways I can get in touch with local small tours.
