Jerry's pick for Dish of the Day
It’s Tuesday in Lyon, so it must be time for a cooking class. As is our tradition, we try to always take at least one cooking class on every one of our trips. Unfortunately, that did not happen last year on our Ireland/Scotland trip. It is simply not possible to go to France and not take a market hands on class and what better place the Lyon, the “gastronomic center of the world” or so said a critic in the 30s.

This entry will be short, but plenty of pictures. We knew there would be a great deal of walking and that we would be on our feet for most of the day, so we took a taxi. This was the best decision of the day, since the walk was straight up hill. The class was in the North end of central Lyon in the middle of a large hill. The Market was on the top of the hill, up several flights of stairs. We spent about 2 ½ hours shopping for the meal. There were six of us in the class and Lucy, the instructor, let us pick the entire menu, meaning what vegetables and protein we wanted to

cook with. We went with a lamb stew, with spring vegetables, celery root remoulade and charcuterie, and pate encrote for the entrée. Dessert would be Ile Flotante (floating island).

We started cooking about 1 and had the entrée around 2, with some nice sparkling wine. We then spent the next 4 hours prepping and cooking. It was the longest cooking class we have ever had from 9 am to 7 pm. Needless to say, we did not have dinner. The class overall was very good probably top 5 of all we have taken. Lucy the instructor was very informative and explained the process and techniques very well. There isn’t much else to say about the day, so I will let the pictures do the talking.
