After weeks and weeks of eating some of the best food on the earth, we finally got our chance to get our hands dirty and cook up some grub for ourselves! Our cooking class began with a trip to the local market, where our teacher took us around and explained all the ingredients while she bought the items for the day. We watch the vendors turn coconuts into coconut powder and milk, the butchers cut pieces of beef and chicken from large blocks of meat, and countless spices, veggies and tofu. We saw from ear mushrooms that are quite disgusting looking, and learned about all the different forms of tofu and why they colour it yellow (with saffron) - which is to give some colour in bland coloured dishes, such as pad thai! Finally the morning of our trek is here! We all pile into the truck and leave the hotel at 9am, stopping here and there along the way to pick up and drop off people and things, and then finally, we are on our way to the park where we will start our trek. We stop at a market outside Chiang Mai where the guide buys all the food that would be needed over the course of the next two days ( and yes, he carries it allllll in his own pack!). In true Asian style, our train pulled into the station almost an hour late, but our hotel pick-up was waiting for us and took us straight to our hotel. Normally we would not have the luxury of this service and would spend the next 30 minutes dodging tuktuk drivers, bartering prices and scanning maps to gain our sense of direction. While this is all part of the great Asian experience, I must say, it was sorta nice to avoid the hassle for once. We stayed at the Winner Inn Hotel for 2 nights, as it was part of our "tour" that we booked in Bangkok. Our flight arrived into the Bangkok airport at 11am on October 28th. We had a quick lunch at the overpriced airport restaurants while we tried to figure out the cheapest way to get into the city. We decided in the end to take the Skytrain (15baht) for a 30 minute ride to the end of the line, then we bartered and ended up paying 150 baht for a taxi to Khoa San Rd, backpacker central in Bangkok. After checking in at @Home Guesthouse (350Baht with shared bath and fan, free wifi, BUT no plugs in the rooms and they charge 15B to let you charge your batteries using their plugs in the common area), we explored the infamous Khao San Road. HALONG BAY Let me begin by saying two things about Halong Bay: 1. It is beautiful. 2. Our trip there was completely disappointing. (Note: Mike says it was "overrated". I still say disappointing) We booked our Halong Bay boat trip in Hanoi at the Tourist Information Centre. We decided that since we had been under budget (gasp, is that even possible!) so far in Vietnam that we would splurge on this trip and pay for a 2 night trip on a nice boat and really relax and enjoy ourselves. We were promised luxury and delicious food, kayaking, caving, swimming, among many other things and were relatively happy to pay 139$ (not including drinks) each for a 3 day, 2 night cruise around the limestone giants of Halong Bay. HANOI Our train pulls into the station in Hanoi at 4:30 am and since we know we won’t be able to check into any hotel at this hour, we hang out in the waiting room at the station until sunrise around 6am. We start things off nicely by being way overtired and getting lost trying to find the hostel – Hanoi Backpackers. Eventually we find it, but can’t check in yet – boo. We leave our bags there then go for some pho for breakfast. I think this day marks the point where we officially could eat anything for any meal. No longer did we need toast or eggs for breakfast – we were doing it like the locals – beef noodle soup for breakfast, lunch OR dinner…or all 3! haha Still waiting for our hotel ... read more

We arrived in Hanoi with just enough time to get a taxi to the train station and jump on the first available train to Lao Cai. This is the closest that a train goes to Sapa. From Lao Cai we would take a minibus a couple hours to the small hillside town of Sapa. Sapa was probably our favourite place in Vietnam, despite all the attempted scams and touristy nature of the place – we had an excellent experience and did lots of trekking. Our train left at 8pm and arrived in Lao Cai at 4am. Word to the wise: there are 3 trains nightly to Lao Cai – take the LATEST one possible! HUE We woke up early that morning to catch the 7am bus to Hué. After waiting for over an hour for the bus to pick us up we started to worry that it wouldn’t arrive. Our worries grew when the bus did indeed arrive. Having just been in an accident (the reason for the tardiness), the bus had windows taped over to keep the broken glass from falling out and huge dents and scrapes along one side of it. awesome. Making our short stays even shorter, we were in Hué for a total of 5 hours where we wheeled and dealed to get a motorbike rental for half price (4$) for 4 hours. Nha Trang After a short stop in Da Lat of just a day, we were eager to arrive in Hoi An where we hoped to meet up with some friends so we spent just a few hours in the beach side town of Nha Trang. We took an overcrowded minibus on yet another windy, hilly, bumpy road with gorgeous mountain views. Travel by bus in Vietnam is very easy and affordable. You buy a ticket from HCMC to Hanoi with stops along the way and you can get on and off buses as you wish. The only trick is that you can only travel with the company you originally booked through. After our first night bus experience in Vietnam (in which we were not on a sleeper bus, but in narrow seats) we arrived groggy and hungry in Da Lat first thing in the morning. A very popular tourist draw in Vietnam is the Easy Riders, who take you on the back of their motorbike for an authentic and in depth experience with Vietnam's culture and sights. We opted not to do this (after much debate) but we sure had our fair share of Riders approach us! We found our hotel (Phuong Hanh) where we had an awesomely huge room with a renovated bathroom with hot water!
