Cafe Coyote
This is a Mexican Restaurant my parents and I love to go to. April 20, 2010
Sorry it's taken me a few days to start writing again. I was so exhausted and jet lagged when I got back from my trip. My parents picked me up from the airport. It was wonderful to see them. I'd missed them very much. They are kind of fun and crazy and I love them. Even though I was really tired, I thought it would be nice to go get lunch before they took me home to my apartment. We went to one of our favorite restaurants, Cafe Coyote. It's a Mexican restaurant that serves amazing food. I had a fish taco, a spicy potato taco with rice and beans. The ladies make all the tortillas for the tacos from scratch. Their salsa is also really, really good. . .very spicy with lots of peppers. I also treated myself to a Pink Lemonade Margarita.
After getting back to my apartment, I immediately crashed. I was sooooooo tired. And I was supposed to be meeting up with my friend, Cheri, the next day to walk 18 miles (28 kilometers). I woke up sore and not feeling well, but determined to try my best.

The place is light and airy with beautiful views of the surrounding hillsides. have been training together since January. We chose to do walk a marathon together as a fitness challenge. We picked the Rock-n-Roll marathon. It's a fun race. They have a band every mile playing music and people dress up in costume. We are dressing up as a girls rock band from the 80's. . .big hair, bright plastic jewelry, etc. .. think the Go Go Girls. Her personality is very similar to mine. . .cheery, positive, and enthusiastic. We meet up at a park inbetween her place and mine, called Mission Bay Park. It has lots of walking trails and is very beautiful. When we started our walk I was already struggling. . .my left leg was incredibly stiff and sore. We would stop and try to stretch, but it wasn't helping at all. Finally we made 8 miles (13 kilometers) and I had to stop. The pain was too much and I was worried that I was making my leg worse. Cheri was great about it. She said that we were 'just shaking the rust off' from not walking much for the past three weeks and we'd do much better next weekend. . .see. . .this is why I

These are my parents, Pat and Crystal. love hanging out with her. She's such a sweetie.
Afterward, we both got cleaned up and met up at a Cuban restaurant. For those of you who have not had Cuban food. . .it's delightful! They cook meat until it is very, very tender and season it with spices and fruit. I included pictures with this entry. Cheri had a citrus chicken chop chop salad and I had a churrasco beef chop chop salad. I'd never heard of a 'chop chop' salad before I started going to this restaurant (The Miami Grill). Evidently this is a style of salad that is very popular in Florida. Under the lettuce is a bed of rice and black beans. Oh! And we also had sweet potato fries. These are basically french fries made with a type of potato that is sweet. They have a very different, but wonderful, flavor to them.
Yesterday I went back to work. My leg was still hurting so I was limping everywhere. Also I was still struggling with jet lag. Everyone was so glad to see me and I was so good to be back. I didn't have much time for visiting because I had a
Mmmm. . .Chips and Salsa
The red sauce (the salsa) is very spicy and so good! tons of reports to write up and we had several meetings.
After work I came home and went to bed at 7 pm. I know that sounds pathetic, but I was not feeling well at all. But this morning I am happy to report that my leg is almost pain-free and I'm not limping at all. Also my stomach feels much better. I think a lot of my symptoms were just from exhaustion.
