A thick soup made from the river shrimp for which Arequipa is famous. DELICIOUS

Anticuchos are grilled meet skewers. They are usually made from beef heart and marinated in vinegar and spices. A very popular street food.

The rocoto is a spicy Andean pepper used all over Peruvian cuisine. Rocoto Relleno ("stuffed Rocoto") is an Arequipa specialty.
