So we failed in our attempts to explore Vietnam. Apparently the Vietnamese Embassy in Phnom Penh (Cambodia) no longer offered visas on the same day - starting from the very day we decided to try get one, and we decided a 5 day wait was too long given that we were already pushed for time.
