Daoxiao Mian

Knife-sliced (hand-cut) noodles. The chef actually takes a big block of 'noodle', and with a large cooking knife, whittles off noodle slices into a boiling pot. They are served in a spicy chili sauce with chunks of beef, smaller slices of bamboo shoots, some greens, and a touch of the numbing spice. Really tasty. (This "small" bowl was only 6rmb -- US$0.85)
