Writing from sunny (or not) Sheffield, sob...here is the Spring Roll Recipe fresh from a Cambodian kitchen! Ingredients: - VERY vague amounts! some carrot a bit of sweet potato a couple of handfuls of cabbage 1 or 2 onions pack of chicken large dollop of brown sugar garlic - as much as you want several dashes of oyster sauce some oil 1 egg pack of spring roll pastry glug of water Makes about the half the number at Christmas to those who were there! To make: Fry brown sugar in oil, add chopped garlic. Then gradually add the following allowing the previous ingredient to cook a bit! - onion - chicken - veg (along with the glug of water) - oyster sauce When cooked take off heat and either allow to cool or burn your hands ... read more

The border journey was interesting as we left around 8am and the bus didn't come until around 9.30. The bus then went off road down a tiny dirt track that led to the Official Cambodia-Vietnam border. We crossed easily with our pre-bought Vietnamese Visa and were soon travelling to the port town ready for our ferry to the next stop on our trip, our island retreat. Oh the way our driver told us that there had been an armed police raid of the ferries...this was a complete lie and it turned out he had just failed to call the ferry and tell them to reserve our seats. The cambodian capital Phnom Penh was a crazy great place! we were lodged at not the greatest of accommodation, in our room, the bathroom was just a corner of the room with some walls sealing it off and was so small, you could sit on the toilet, be under the shower and using the sink all at the same time!! but the place backed on to a lake area which was pretty nice! we had a really nice tuk tuk driver who had picked us up from the bus and he spoke really good english so we went on a day trip with him to the sights around phnom penh! it started at my favourite the shooting range, which was at an army base quite far out of the city. i decided to buy 30 rounds ... read more

From Laos we crossed the border with not a penny to our name as there were no cash points on the islands. As we had to pay for the Cambodian Visa we had to borrow money from our coach driver with a $10 charge! The border crossing was a cheeky affair as you had to pay for everything. $1 for the stamp out and then in, $1 for a health check etc. We then had a pretty long bus journey to our first stop: Siam Reap. After leaving our cell at around 8am we arrived in Siam Reap at mid-night. We were exhausted and so went to bed for an early night and a lie in. We had a long bus journey down to Pakse in southern laos, it was our first bus that actually had beds in it and they were not that generous on the space! as we got on out seats were taken by others and we ended up (thankfully) right at the back which was just a massive mattress which we only had to share with another lady and her little girl! but we saw two other tallish lads trying to squeeze into their shared bunk! we reached pakse and had planned to go straight to a place called paksong which was supposed to be the jumping off point for visiting the boloven plateau which had been highly recommended! so we got another local bus straight away out to paksong and got dumped off on the main road ... read more

The bus to Vang Vieng was a disgusting 6 hour affair going around winding and twisting roads that lined the hills and mountains of the area. I did not enjoy the journey and took a fair few travel sickness tablets to help! Although, it has to be said that the scenery was beautiful which meant that Anna took a few of the infamous out of the window photos! We finally made it after what seemed like hours to Vang Vieng, a small town that has been completely over-run by tourists. The main attraction for the area is the Tubing (an activity that involves hiring a huge rubber ring and floating down river stopping on the way at riverside bars that have a collection of zip-lines, rope swings and slides) and as such a lot of travellers ... read more

From the Gibbon Experience we got on board an overnight bus to Luang Probang. This is a small town in the North of Laos that was colonised by the French. There was a lot of the old French influence there in the street names, hotel names and the cafes that lined to small streets including our favourite breakfast haunt Croissant D'Or! We found a hotel easily as we'd already picked one out from our guide book. Again after slumming it in a tree house we opted for a little luxury and got a room with a TV, air-con and a hot shower all for the high price of just over 8 pounds. We set off for the border after an insect-free lie in and a quick stop at the bakery for breakfast. The bus took about 2 hours until we arrived in Chiang Khong. We got a tuk tuk to the river where we went to passport control and officially left Thailand. We crossed the river by a long boat to get to Laos where we walked up the hill to get our Laos Visa. From here we found a guesthouse and booked onto ‘The Gibbon Experience’ - a three day trip into the jungle to live like gibbons! We were to stay in a tree house and zip-wire from platform to platform around the jungle! We had to stay a day and night in Huay Xia, the border town which turned out to be pretty dull! we arrived in chiang rai and quickly left as we organised a room in an akha hill tribe village. it was a bumpy ride out to it in the back of a truck but the scenery was stunning and there were lots of nice tea plantations nearby! our lodgings was a hut on the hillside which had a fantastic view across the valley, however the price was quite a high infestation of bugs which meant that our bug spray was quickly used up and we turned to the shower to hose them away! we left the following day on our three day,two night trek with our two guides - Apee and Thor. we left the akha village, packs on and with our bamboo walking sticks feeling very much like the hobbits leaving the shire - 'mr ... read more

We left Kanchanaburi in a minibus for Ayuthaya (the old capital of thailand)having had to bypass Bangkok due to the troubles! we only had a few hours there but we managed to efficiently locate a steak restaurant for dinner! then it was onwards to chiang mai on the overnight train which was not the best of nights as the train jostled about really badly so it felt like we were being just thrown about in our bunks! as we arrived in chiang mai we saw lots of red flags and people at the train station and found out that as the troops had stormed the bangkok barricade they had now come here and there was a curfew in place! brilliant! to add insult to serious injury the main cinema complex was shut down completely so watching ... read more
