A great cup of Dominican Coffee
It only took a couple of hours to make!

Cracking and winnowing
The process of removing the shells using the traditional 2 plastic collander method. First bash the beans with a piece of 2 by 4, then pour them from collander to collander letting the wind remove the pieces of shell

Green coffee beans
These can be kept a long time. This is the state most coffee is shipped.

Roasting
Under Son's watchful eye, I was allowed to do this myself

there are bits of burnt skin that are removed using the collander method

Grinding
in the traditional "sitting on the kitchen floor" mode

The ground coffee
The grinder belonged to Son's mother and is rumoured to be 100 years old

Dominican coffee...
I grew up on Dominica and remember using a grinder like that many a time. I wouldn't be surprised if it is 100 years old, the one at my aunt and uncle's house in Antrim Valley looked exactly like that and had been in use since the late 20's. Do you live over near Calibishie? I used to love going to Red Rocks when I was a kid.

Where are we?
We have friends in Calibishie, but we are on the Caribbean coast north of Portsmouth - the village of TOUCARIE (and sometimes Toucari).
