So sorry about the delay, friends. Here is the last Chile entry of our trip. Better late than never...

My parents have raved about Chile for almost a decade. For years they shared stories about the friendly people, seafood, and the ever-popular... pisco sours. They first fell in love with the country when they started their Rotaplast International volunteer surgeries in South America operating in Valdivia. They are part of the reason Trevor and I knew we had to spend time in Chile during our Latin adventure, and after years of hearing about all that we were missing, meeting them there was the perfect end to our trip.

We are proud and impressed that my Dad made not one, but two appearances on our eight-month honeymoon. He wins our award for MVT (most valuable traveler). When the padres arrived, we kicked off the trip with (what else?) a pisco sour and a toast to the future. This delightful drink is made with pisco, Chile's regional brandy, lemon juice, egg whites, simple syrup, and bitters (like a margarita, only better). My Dad has also raved about the Chilean congrio (conger eel) for years, and this delicacy, along with the paila pil pil (a savory seafood stew combo) was some of the best seafood we´ve ever tasted. We decided right then and there to let the ¨Taste of Chile¨ begin.

We continued onto what we called the ¨Lake Geneva¨ of South America in Pucón, a tiny tourist hot spot with a volcanic black beach on the edge of Lake Villaraca. Trev found us a little cabin outside of town where we spent our leisurely mornings sipping Nescafe (the only coffee available in Chile), our days exploring, and our evenings sampling wine and making meals together. We munched on empanadas, home-made salsa, steak sandwiches and more. Trev even worked his asado magic yet again to make us delicious steak and grilled vegetables. We're definitely installing a South American-style parilla (grill) in our backyard some day.

Trev and I swore off any extensive exercise after our seven-day trek through Torres del Paine, but the crazy McCullochs wanted to climb the local volcano. We´re pretty sure they would have continued up singing the Sound of Music on the hillside if we hadn´t dragged so far behind. We put our foot down and insisted we go back to town to continue eating immediately. We even discovered the German cervezaria Kuntamann for brews and funny photos and the fanciest sit-down Taco Bell-Pizza Hut on the waterfront.

My parents promised to teach us to make pisco sours and speak Spanish with us in the States to ease some of our culture shock, and although we had the adventure of a lifetime, we counted down the days until we returned to Buenos Aires to hop a plane to our home country to be with our family and friends, sleep in the same city for a change, and enjoy free wireless internet.

Our time with my padres in Chile posed the toughest questions of the trip, such as... Should we enjoy pisco sours or wine? (Oh alright, that was actually easy. Both.) How could we possibly sum up 13 glorious Latin countries on one travel blog? Which country's accent will prove most helpful when we return home? Where would we find malbec wine or satisfy our empanada cravings in Colorado? And how in the wide world would Trevor and I go from spending every waking (and sleeping) minute together on an amazing adventure in Latin America and return to real life? We would soon find out...
