Year Out recommendations ???

Hi all , we are looking to take a year out next year, have read a lot of the great blogs that are posted here and are quite keen on South America .
One of our favorites is South Africa, beautifull country and lovely people, but they have a lot of problems there, so not sure.
The other countries that look fun would be South America, Brazil, Argentina or Chile.
Our hobbies are walking , horse riding , fishing and swimming etc. We speak French, spanish and obiously English. Any input would be great.
