Too much oil, not enough sense.

Fish bashing in the market
After we changed to Julies GH, we were brought to the local market where Nokky explained to our large group (20+) the different spices and vegetables on offer. We were tired and hungover and it was another sweltering day, so we sought the shade and didn't really look forward to standing in front of a wok all day. We had skipped breakfast on the advice of other people who had attended the course. The set up is quite straightforward - split into different groups, prepare the ingredients, cook in it in a wok, eat your creation and then rest. It all worked quite well until the third dish when everyone was getting stuffed, but not to worry, they provided doggy bags to take away what you couldn't eat. Our instructor was Miao, and her deadpan, high-pitched delivery with a sense of humour drier than my own was amusing in it's own way. Under a little scrutiny, however, it transpired that everything she said had been learned off, example: Miao "This dish go quite well with bee-ah, everything go well with bee-ah, ha! ha!". more fluent and with a sexual double entendre every second sentence, but she must do the same jokes every day. Anyway, it was a long day chopping, woking and hardest of all consuming the food. You couldn't really go wrong as the wok is the equivalent of an asian microwave. Agnes tried some fruit-carving and I made up a green curry paste in a big stone pestel and mortar, this was quite nasty if it splashed up into your eye. Agnes got sick half way through - it must of been the heat and the hangover because we ate her dishes the next day and they were delicious! All in all a great day for 800 baht, but not as difficult as the chinese cooking that we tried in Yangshou.

massaman curry or red curry ?
Actually it doesn't have kaffir lime leaves in massaman curry. It looks like red curry more than massaman which is has meat potato and onion.
