In France, i would suggest Besancon, Beaune, Nuit Saint George, and Dijon. Besancon is a small town in the Franche Comte region of France; if you drove any furthur away from Besancon you'd be in Switzerland. Besancon is where Victor Hugo was born and primarily French tourists come, so for an English speaking tourist it's a bit off the beaten path but worth it. The centre ville is very lovely and there's an interesting museum of time that you have to see as well as a very fantastic Musee des Beaux Arts and Musee Archeologique. The city also has a citadelle which was very cool and is worth seeing as well.
Beaune and Nuit Saint George are small wine producing villiages in the Burgundy region in the heart of the Cote d'Or. These cities are famous for producing wine, so you have to visit a vinyard or domaine while in these towns, particularly Nuit Saint George and Beune has a lot of interesting historic sites. I actually lived in Dijon for 6 months and it is a bit well known but Dijon doesn't get a horrible amount of tourists like you see in the Riviera or Provence or in Paris of course. Dijon is the capital of the Burgundy region and is just lovely; it's full of history and walking through the centre ville is like stepping into another time. There are a lot of nice cathedrals to see and there's a nice Musee des Beaux arts there. Dijon is were Dijon mustard came from, but you also want to try some pain d'espice or ginger bread, which I highly recommend that you try.
As for Italy, go visit Parma. Parma is very small but the downtown area is very quaint and pretty, lots of old Medival churches and monuments, and of course you have to try some parmagianno reggiano and some proscutto di parma while there!
I've also been to Oslo, which is advertized a lot in regards to Norway but is not at the very top list for travelers to see, but you must go. The city is very nice and pretty and there are some amazing museums. You HAVE to see the Viking Ship museum it will rock your world! The Norweigan folk musuem is awesome and there are a lot of great art musuems. Well good luck and enjoy yourself and have fun! You have a great trip planned ahead of you I hope it all works out!
