Personally I would just hang out in the old town walking around or relaxing if I just had that much time. It is famous for marijuana cafes and prostitution but it is still beautiful. The train from the airport goes right to the old town. It only takes around 15 minutes to get between the airport and the old town.
Of course there are also other things to do instead. A visit to Anne Franks house or the Van Gogh museum are amongst the choices.

Reply to this a must is a visit to Volendam....a short trip outside amsterdam but well worth it..tourist town is filled with beautiful little shops..get your picture taken in tradition dutch clothing ..have some great dutch food,,,and be back in plenty of time for your flight.
