Gonna "find myself"

Howdy. I've been struggleing with what i want my next step in life to be, and its fallen on this answer: travel. And so, I'm going to europe once I turn 21 this upcoming spring.

My intent is to spend 1 year or longer out there, finding work and such as I go and sleeping in a tent or even totally out doors when weather is permitting.

My backpack will truely be my home, as i will be selling or giving away most all of my worldly posessions, save for what I can carry on me, and thats where asking for advice comes in. Space and weight will definitely be the biggest issue, and so what should be on the list of things for me to carry? if possible note things that would not be permanent (things that will need somewhat frequent replenishing) so i can move them to a list of things to get after preparing, once setting foot on European soil.

Also, while my trip will be massive and I have no intention on planning it all at first, i intend to start my trip in Amsterdam, are there any must-sees that might fall into a continental treks path from such a starting point you could also reccomend? and I'm not talking traditional tourist traps, but genuine beauty and wonderfull things that could often be overlooked. yeah, everyone wants to see the louvre, but is there anything of note say...50 miles south?
