Clarification on Schengen visa

Greetings!!
Myself and my spouse are traveling to Europe on 28 Sept. 2012. My spouse has submitted Schengen Italy visa application on Sept. 3 however we had to change one hotel booking and cancelled one booking.
- Would it affect my spouse visa approval chances as her Itinerary is no longer the same to what she submitted?
- We have booked 2 hostels by just paying 10% booking fees (NOT full payment). Will it suffice for our Schengen visa application?

My experience as an independent traveller since 1993 by Twag
Since 1993 I do independent travelling on my own. I have been to a total of 55 countries on 5 continents. During these times I never had severe problems. In fact I never lost my wallet, flight ticket or something similar or ithey got stolen.
