I used to live in Guatemala and could suggest a couple of places there...
First around Antigua and Guatemala City are many volunteer projects aswell as schools where you can learn spanish and do work at the same time. There are aswell some resturants and pubs in Antigua that take in foreign staff for some weeks work.
By Lago Atitlan (such an amazingly beautiful place) there are two villages, San Pedro La Laguna and San Marcos La Laguna, where you can get work aswell in resturants/bars. In some places you get money, other offer accomodation and food. San Pedro is the "party"place and San Marcos the more quiet one, depending on what you wanna do while working.
In Quetzaltenango there is a hostel I know of that offer accomodation in exchange for work and Ive heard of a pub too, must be more places but Ive never spent alot of time there myself.
In many of the tourist places you can find these kinds of deals. You dont really need a working visa for this temprorary things in Guatemala, you woldnt earn alot of money, just to get by and a place to stay. If you wanna work for longer time maybe you should contact your embassy to ecieve information.

good luck on your travels! Reply to this
