That's a long long list!
Ok - firstly, India is not renowned for their bars! They're not a drinking culture,- but having said that, in major cities you will find some.
Secondly - the best food to be had in India is in the cheapest places. Trust me on this! I know we all like the idea of sitting down in nice restaurants etc, but the once or twice I ate in more 'restaurant' type places in India, the food wasn't nearly so good. Go to local Indian workers' canteens where you get re-fillable Thalis amongst other things. And Indian Coffee houses are good for food too.
Places I went to:
Delhi - didn't do a lot of sightseeing here. The red fort was a disappointment. The spice market was great. Wandering around through the streets was also great.
Jaipur - I can't remember the name of the hotel, (could be International something) but it has a cocktail bar on the top floor which is pretty nice. I think its in Lonely Planet. The city fort and the amber fort are well-worth a visit, plus the city bazaars.
Pushkar - in my opinion, ruined by tourism, unfortunately. It's a traveller's enclave and overrun by westerners. Having said that, it has a beautiful lake and temple and is still worth a visit on your way to Jodhpur. No alcohol allowed in Pushkar as it's a holy city.
Jodhpur - my favourite place in Rajasthan. the fort is a must see, it's beautiful, with amazing views over Jodhpur. Also the main marketplace is a good place to go.
Jaisalmer - again a bit of a tourist haunt because of the camel safaris, but you might want to do a camel safari. the fort is good as are the Jain temples. Most of the tourist restaurants are ok and serve beer.
Udaipur - I was ill in Udaipur so didn't get to see much, but I've heard the palace is great.
Agra - Taj Mahal obviously, I didn't go to the red fort but heard it's good.
Varanasi - everything about this city is amazing. take a boat down the ganges at sunrise.
Sarnath - the buddhist temple is worth a visit.
