What to accomplish in about 2 weeks?

Need advice, starting to feel my original itinerary requires me to rush from city to city, and would like everyone's opinion on what they think would be best?

I've placed my itinerary on here before and now questioning if I should stick with it; it's starting to feel as if I'll be rushing some of the places. So here's my question:

I will be in India for 3 full weeks and will spend about a week in Gujarat (must)

So that leaves me w/ 2 weeks, maybe just over 2 business weeks; do I...

A) Cover 1 state such as Rajasthan in the remaining time, and hopefully go to Haridwar/Rishikesh as well (time permitting) or ...

B) Stick to my original itinerary: Rajasthan (Udaipur, Jodhpur, Jaislamer, Jaipur) --> Haridwar/Rishikesh --> Gurgoan --> going North towards Shimla and Dharamsala and then head back to Gujarat?

Also heard it'll be quite cold and potentially some spots may be closed for the start of the winter season.

Thanks in advance to everyone reading / responding. This is my first solo travel into India.
