Travel Advice for Hong Kong January 2010

I plan on traveling to Hong Kong The last week of January 2010. May be anywhere for 8-10 days.
I will be traveling alone but will meet some forum "friends" the last couple of days there.
I would like to stay at a good hotel (room for 1) not too from from everything.
This are the places I plan on visiting so far: Disneyland, A'ma The goddess of the sea,
Lantau - Tian Tan Buddah, Man Mo Temple, Shaw Brothers Studio, Avenue of the Stars.
I may also like to take a trip to the mainland if ime permits.

That other places can you recommend.

I would like to stay at a good hotel (no hostel) - but not too expensive. Was looking at the Ramada but no "open" rooms for my dates.
Is there any hotel in the like of the Ramada you could recommend.

Your input - no matter how small or great will be greatly appreciated.

Unfortunately my input is small, because I havent been to Hong Kong yet, but here is a thread which may interest you.
