Do visit Mr Chen in Santa Rosa de Copan, a Chinaman living in Honduras, for he will cook you the largest plate of Chinese food known to mankind. This plate of food is only “normal” size, he also offers “family size”, which I would have liked to have ordered just to see how big it would be.

Do not ask a group of girls where there is a bar, for they will tell you, “yes, follow us”, and then take you on a 20 minute expedition through town and when you get there they will tell you, “but tonight it is closed”.

Do go out on the island of Utila and party, also, get you and your friends to wrap your t-shirts around your heads in order to turn it into a turban, as many more strangers will do the same until half the club join in also.

Do repeat this nearly every time you go out on the island.

Do stay at Rubi’s Inn in Utila and snorkel in the sea two meters away from where you sleep and find sting rays, barracudas, sea horses and many more types of fish.
