New Orleans on to Mardi Gras (Just Kidding)

I have always wanted to go to New Orleans especially for Mardi Gras but it had already passed. I timed this vacation to correspond with the Canadian Civic holiday to extend it by one day. I have some vague ideas of what I want to see but definitely want to try as much food as I can and see Bourbon street. I had booked a number of tours so that I could see as much as I could in a short period of time including a Food and Cocktail tour.
