(Buy Rice cakes from Vietnam market. Also great with any crackers or toast)

PASTE:
3 Coriander Root
15 gr of garlic
30 gr of dried chili re-hydrated in water
½ t Black pepper corn powder (or white)
1/2t Salt
Pound ingredients in mortar
Dipping Sauce:
1 T Paste made before (Substitute the fresh pounded paste with thai chili paste).
80 gr Mixed chicken, pork or prawn (No beef)
15g shallot (finely chopped)
1 t White sesame seeds
15 g of pounded roasted peanuts
Preparation:
1 T oil
1 T paste (Can replace with chili paste)
Chicken minced
Shallots minced + peanuts
1 + 1/2T of tamarind sauce
1+1/2 palm sugar let well
Top dipping sauce with sesame seeds
Garnish with smashed roasted peanuts.
