Best cook in Italy!

Claudia is an instructor at the Apicius-the culinary institute of Florence. Our class is a "Master" class of contemporary Italian cooking which means that you use only what's fresh at the time, and you don't cook it for hours. The red sauce I made is not cooked. Fresh tomatoes, blanched, seeded, and blended with olive oil until it froths. The class is small; 3 girls from Texas, 3 of us from Arkansas and a guy from S. Carolina. We are teaching Claudia our southern accents!

Happy June 2nd! It's a holiday here. They celebrate their unification date and have parades and some stores close. Sort of like our 4th of July. We've toured a museum, been to the Leonardo exhibit of his machinery, and to the leather store (well, maybe only one of us went to the leather store).
