Finally had a few hours time to visit the old spice market in old Delhi, it is worth a trip if you ever in india, the smell of cumin and cloves is strong so much that it makes you cough , Wat a lot of people do there all the time its the real India when you walk there and just look around its hard to describe guys i made some pictures that will tell it all the thing i will take with me from this is the smell of all the spices cloves nutmeg bay leaves cumin peppers you name it the aroma is still in my nose wile i am writing this a few hours later, well i am making it short this time hope you like the pictures the will say more than ... read more

Well after moving a few times and living out of my suitcase i got a apartment in jangpura extension and got unpack t its nice to come home to your own spot and just relax and put your feet up i missed that, i also finally got some direction with work, for a wile i did not know Wat i was or needed to do here it all seem to messed up but now in the last few weeks i got my baring and things are moving along in the kitchens, i hired 4 new guys but think i need to let one go because he is not that good and i don't have time to be on his ass all the time, the other 3 are nice kids the want to learn and the are ... read more

As you will have heard on the news there was a bomb blast at the Israeli embassy and that is just a block away from where i live, not to worry it did not effect us and i am careful and have my eyes open were-ever i go. There is a lot of police on the street and lots of man in green military and security is up at the gated community where i live . so i am save its just another thing you will encounter here in Delhi...remember India has over 200 million Muslims living here . Not had a whole lot of time to write in the blog because of the new menu we are going to launch and i have to cook every item to see and taste if we can improve on it, also have to interview 2 more new cooks and have them cook something here so i can see what the can do, On Saturday we went to a exclusive night club here in Delhi called the blue frog. well not to much to tell just a 4 day battle with the famous Delhi belly, it sure is not a fun thing. we all have to go trough this kinda thing here in India, i just hope it am good for a wile, still looking at apartments but did found something that might be suited for me, i hope i get it, work came to a dead stop with the belly flue. but all the kitchens followed my orders to the letter, something that even surprised my boss who told me that will never happen it would take some time...guess showed her...lol, i would give them a 55% now but i need to get them up to 98% of hygiene but i think i should be happy if i can get it up to the ... read more

well dear readers i did get to the kitchens in gurgaun today and it is unbelievable wat i found the health inspector would have a field day there, i must say its not as bad as i expected but it was pretty bad, eggs not in cooler , lunch meat just tossed in cooler unwrapped cheese the same raw meats and dairy and open containers together is was bad, i don't think the liked it that i started to rip out all the stuff in the cooler and freezer and made them clean it..i am going to give it another day and then go back and check again..also good news looked at apartment today was nice.. big room my own bathroom with washing machine and kitchen that i have to share with flat mate who is ... read more

well its going to be a busy day and hopefully i will like the apartment we are going to look at today , i am so tired of living out of suitcase. Still have belly cramps but thank god i took my antibiotic with me so its getting less. There is a dutch community here and the have there new years polar dip..lol that means jump in a pool with 60f water, people are saying to me all the time its winter don't you get cold...ahhhh yeah i am from pa so no not really . in a few weeks it will be spring here i guess but for me its spring already, also need to arrange a car for sunday so i can go to gandi,s house and it was there where he got killed ... read more
