Yes eventually you get a feel for it. Speaking of the south when I was visiting Carcassonne I noticed they kiss 4 times, twice on each cheek. This made for some rather lengthy goodbyes, and once after our train got rescheduled twice, I'd kissed everyone 12 times before leaving!
I visited Paris and the south of France last summer and I completely understand the overwhelming feeling of going in for traditional French greeting. Like you I also figured out the etiquette eventually, and from now on it should be smooth sailing for you!
Thanks for the kind words! I'm definitely not in school anymore though, could you let me know if that's written somewhere? As for studying French I studied on my own for a few years during the course of getting to know my would-be wife. It was lots of books, podcasts, and French films with subtitles, believe me!
