20140703 5 2 RICE CRACKERS WITH MINCED CHICKEN AND PEANUT SAUCE
YUM
(SUBSTITUTE: SQUID OR PORK OR SHRIMP)
50g Minced Chicken
1 Coriander Root
15g of shallot
15g Crushed Peanut (Mixed with chili to taste)
100g Coconut Cream
Rice crackers or any toast of cracker.
PREPARATION:
In wok at low heat
2T of Oil. Add shallots and Coriander root stir fry until it releases aroma. Turn to Medium Heat and add Coconut Cream
Add
1T of chili paste boil and add minced chicken and peanuts
Seasonings:
1 T Tamarind
1 T Palm Sugar
1 T Fish Sauce
Keep stiring until it thickens like a dip. Serve on a dip saucer.
