Buddhist cooking is vegetarian because no meat or fish can be consumed and killed as these are part of the karma cycle.
So meats and fish tastes are replaced by mushrooms gluten, dou fu and other ingredients I had never used before.
We made a fish shapes dish that resembled the fish taste and texture, dou fu skins filled with a vegetable mushroom filling and some stirr fried dishes.
It was a great day and the translations done by our guide were clear. Also ingredients are based on hot cold body circulation. Meaning that you should not eat spicy when you have a cold as the cooling effect from red peppers after consumption is such that your immune system has to work even harder.
Anyway enjoyed it and will now use my newly learned skills at home.
