drunk as shi t, been a rough couple of days... started workin yesterday (my moms bday... AUGURI MA!!!) and ended up wrkin a 15.5 hour day!! yohoooooooooooo!!!
today i worked from 10 am till midnight, and this place is a fuckin joke...
we didnt have water froom 10 am till 13.15,,, the place has a tank for the water, which was empty...they filled it up and by 13.30 we were ok, but then around 19,00 the pump broke down and we had no water during dinner service... meaning using 10, 5-gallon water bottles throughout the night (we started out w 2...) to wash plates, pans, YOUR F--ING HANDS.. etc... happy time!!!! half the time we LITERALLY had no water to do ANYTHING... i've been through a lot of shit in this business, but this is a first... and hopefully a last...
the way things are goin i'll work till the end of the week and then quit and spend a week travelling around oaxaca...
it's a goddamn shame (apologies to all th religious folks...) since this place is supposed to be fancy place much less a slow food (for those who are not familiar with the term look it up...) resaurant.. and its far from either...
the pasta is pre cooked with the sauce (and portioned in little f___ing plastic bags ready to throw in a pan...) and about a fifth of the menu items go straight from the fridge (in its plastic bag...) to the microwave, then on a plate with sauce and garnishes and bon appetit.....
the thing that ABSOLUTELY KILLS ME is the whole slow food gimmick; this place is the antichrist of it all... ALL THE MEAT AND FISH ARE FROZEN... EVERYTHING... and at the end of service (and we finished service at 21.30 today bc we had no f---ing water) we got to clean the kitchen AGAIN for 2 and a half hours (since its a daily process), moving ALL of the stoves, refrigerators and such from the walls (yes ladies and gentlemen, they are ALL on wheels, as if it has to be done so thoroughly on a daily basis...), which only after 2 days i think is utterly f---ing ridiculous... so to put the cherry on top of the cake, at the end of service, i walk into the locker room (where the storage is...) and see the sous chef pull out ALL of the fish and meat (except for the rib-eye steak) from the freezer ready for tomorrow.... meaning 8 ducks, 3 sides of salmon, and a 5 kg package of octopus, and something else i cant remember,,, not to mention the chicken, ravioli, and other shit they keep pulling out of the freezer for use during service...
OK... apart from shitting on this place so much (which it deserves every ounce of...) i must admit i have learned some sauces which i am VERY happy about, but that's about all that'll keep me there so as aforementioned i will be leaving at the end of the week...
In all of this the owner approached me yesterday and said we should talk... (yes folks, still no talk of renumeration...) and compltely ignored me until late last night when he said we would talk on monday... MONDAY....
anyway... i could go on for A LOT MORE about this place... its a shame it was so deceiving... at least i didnt get my hopes up...
AAAAAAAAAAAAAAAAAAIIIIIIIIIGHT!!!!
