This seafood dish (pronounced suh-vee-chay) is very popular on the Galapagos Islands. It is a soupy mixture made from onions, peppers, tomatoes, some type of seafood, and lime, lemon, and orange juice. The most common types are "ceviche con pescado" (fish ceviche) and "ceviche con langosta" (lobster ceviche)
