some of our Cab Sav before bottling
Lorenza & Melissa with a small batch of our cab sav aging in the barrel I had my fingers crossed for the last few weeks that our 2007 Cabernet Sauvignon would be ready to bottle before we fly out to Madrid. Luckily my wish came true and it is all safely sealed away in bottles and cellared for the next six to twelve months until it is ready for drinking.
So, with twenty days before we depart I am relieved that my winemaking duties are done for the year. All that’s left to do when we return is label the bottles! So, between now and the next harvest the only work to be done is drinking and planning any minor changes to the winemaking process for 2008 - it’s a tough job but somebody has to do it!
