We made it to Trieste and decided just to stay near the main square at the Jolly Hotel. We had stayed in a Jolly in Milan and it was nice. So after a little driving we checked in. We had the lady at the front desk call the restaurant that our friend Fabio and Jessica Flagellio had recommended to make a reservation. Our friend Fabio went to cooking school with the chef Fabio Fortuna that cooks at this restaurant in Trieste. The restaurant was located right on the main Riva near the main Unitca square and is called Il Nastro Azzurro. Everyone at the restaurant was very nice and one of the waiters spoke a little English. But everyone else spoke only Italian. We met Fabio Fortuna and he said that he would cook for us. We put the menus aside and knew that we were in for a treat. Our translator Luca brought us an amazing red wine it was a blend of local grapes called Vertigo. It was delicious. Dinner was the most amazing 7 courses! There were 3 appetizers of different kinds of fish, then a crepe filled with pesto and scampi, then some amazing homemade pasta and clams and finally part of this gigantic fish that was on this trolley that was filled with ice that they would wheel around to show. It was a Mediterranean white fish called Dedack. We had never had it before. We were completely stuffed! We talked with Fabio with Luca our translator and thanked him again and again for the amazing meal. This was the end to a fantastic 4th of July. We were in 3 different countries and has an unreal Italian dinner prepared especially for us.
