How to get involved with volunteering in Southeast Asia?

I am going backpacking through Southeast Asia for 3 months. I always like to do a short-term volunteer stint when I'm traveling but I do not like to book it through NGOs or other organizations beforehand that charge a fortune and force you into a time frame. Does anyone have information on volunteering while already there? Somewhere I can just show up while traveling to lend my services for some weeks?
