I haven't been to HK in two years now, but it is a fairly expensive destination. Finding a place to stay during high season can be tricky, not to mention pricey. Keep in mind when checking hotel rates that the tax and/or service charge is usually not included in the list price. I use to stay in lower end hotels, I guess they start around 500-600 HKD or so. There are also lots of hostels around Causeway Bay, I've stayed in small rooms for around 200 HKD per night.

A cheap way to get around HK island is by tram, the price used to be 2 HKD for a single ride. Consider getting an Octopus travel card for the subway and some of the buses too. You can save more money by grabbing your food from the food stalls and small hole in the wall type eateries, convenience stores like 7-11 are everywhere but can be expensive, perhaps you can find cheaper marketplaces instead.

For hotels; here is a good place to start: http://www.asiatravel.com/hongkong.html Reply to this

To add to Johan's comments, I think they also fill up in the low-season as there are a lot of wealthy tourists that come over from China and the hotels also get filled with the many conventions always going on.
If you're looking for ultra-budget you might try the infamous and slightly dodgy ChungKing Mansions on the Kowloon side. I think Frommer's sums it up nicely:
