Working Holiday Visa

Me and my bloke will be going to Australia in 2012, but the problem is, my boyfriend will have just turned 31 by then.

However,

1. on the application screen it says you must be under 31 AT THE TIME OF APPLYING? Therefore surely this means it doesn't matter if he is 31 by the time he comes to start the working visa, as long as he was under 31 when he applied? Does it prevent this on the application itself so you don't get any nasty surprises in Australian immigration?

2. If he is unable to get a working holiday visa, would Wwoofing be an option? Do you have to pay to Wwoof?

3. He spent a bit of time in prsion over 10 years ago for a violent offence (it'll be over 12 years ago in 2012). Would this hinder his visa application?
