I'm going with my girlfriend to Croatia in July, and we're sorting out an itinerary...
I want to explore the towns, but we'd both like to spend our days by the sea too. Is there anywhere in the south, preferably not too touristy, that is close enough to Dubrovnik but also has sandy beaches? Which are the best hotels there?

There are not many sand beaches around the area, it's more "galet" style...which allow for clearer water.
Are you going down, we are stopping also in Sveti Stefan, but that's not Croatia anymore.
if you do go out to the Islands around, there seems to have some amazing places...will be happy to read what other are writting about the place.
No travel for 3 weeks...but Monday, I'm back on the road...for some serious trips...

Shane is visiting us in Bangkok in a month time. I wish to go to Ukraine one day. Mari told me that we could go one day...but she will not let me go alone (I understand...smile). But it won't be soon...just got some airline tickets for Christmas period(diving, skiing, casltes, camping in the desert...wine, partying...all of this in a single trip)...can't imagine that Leslie could reach is 50+ countries before he is 12!

Reply to this I've heard good things about Neum in that little exclave of Bosnia a bit further north up the coast from Dubrovnik. I don't really have any experience with that part of Croatia though, I'm more familiar with the north adriatic coast than the south.
Hotels? If you're staying outside of a city I'd look for apartments, that's your ideal source of accommodation. Everywhere is full of them. There are hotels occasionally scattered around the coastal towns and villages but they tend to be expensive.

Reply to this I spent a few days in Croatia in December, my first time there and I went as I have family there. We saw Split and Dubrovnik which were both beautiful, though in July they will be packed with tourists, but still worth a day or so in each I think. Definately do some island hopping, if you pick your accommodation right then it will be quite cheap. The only island I went to was Vis, where I have family, and it has beautiful clear beaches especially in the town of Komia. Having said that, I don't think you can go wrong in Croatia, the whole coast is awesome.
Also, if you get a chance, try to get to Montenegro, a town/city called Budva, I ended up there by accident and it's great, an old walled city, a harbour, beaches, cliffs and mountains all right next to each other. And in Croatia try not to miss Plitvica national park, with the lakes and waterfalls. I missed it and I'm kicking myself for it, the photos I've seen are fantastic.
