Follow the Mekong through Laos -
Overnight train to chiang rai from bangkok, then a 2 day slow boat from the border with Thailand - Xiang kong to Luang Prabang for temples and a beautiful town, then the bus to Vang Vien for tubing and partying, bus to Vientiene for coffee and cakes. Overnight triain back to bangkok should take a week or two

Coast to coast across Canada sounds like a great trip, and could be open to lots of different modes of transport!
