... our guide was big on emphasizing the requisite aging of coffee beans, allowing us to sample two Chemex versions - one with freshly-roasted beans, and one with beans that were aged four days. The fresher beans had a distinctly vegetal characteristic to them, and the aged beans definitely had a more pleasant flavor.
