Slow-Cooked Goat ...

... in a tomato-based sauce and anthotyro, a salty local goat cheese, similar to Italian ricotta salata when grated. The pasta was a Heraklion specialty, similar to something we had in Southern Italy last summer but better, a bit like a miniature baguette in shape. The goat was melt-in-your-mouth tender, the sauce was fabulous, and the pasta deliciously al dente - this was on par with some of the finest pasta you would find anywhere in Italy.
